Dickory Dock Cocktail

Some cocktails bring the best of several elements together, yet remain simple and accessible in their taste. A perfect springtime cocktail has to be all these things, eclectic yet simple.


5 large rosemary sprigs

1/2 cup honey

60ml Vodka

20ml cranberry juice

30ml lemon juice

Sepoy&Co Indian Tonic Water

2 dashes orange bitters

Garnish sliced lemon and rosemary sprigs 


For the rosemary honey, in a heatproof, sealable container, pour 120ml boiling water over the rosemary. Let steep, covered, for 20 minutes, then stir in honey until dissolved. Continue steeping until completely cool, about 1 hour. Strain before using.

For the cocktail, combine all ingredients except for garnishes in a cocktail shaker with ice. Shake vigorously, then strain into a rocks glass over fresh ice. Top with Sepoy's Indian Tonic Water. Garnish with a lemon wheel and a sprig of rosemary, clapping the herb between your palms before adding it to the drink.
